  • 1 green onion (finely chopped)
  • 2.5 tbsp regular soy sauce
  • 1/2 tbsp sesame oil
  • 4 large eggs (beaten)
  • 2 tbsp vegetable oil

Instructions

  1. Heat vegetable oil in a large pan or wok over medium-high heat.
  2. Pour in beaten eggs and stir-fry until they begin to set.
  3. Add cold rice to the pan, breaking apart any clumps.
  4. Push everything to one side and add chopped green onions to the empty space, mixing thoroughly into the rice and eggs.
