Ingredients
- 1 cup (240 ml) water
- ¼ cup (50 g) granulated sugar
- 4 tablespoons (60 ml) vanilla extract (alcohol-free)
- 1 cup almond flour
- 2 tablespoons (15 g) all purpose flour
- ½ teaspoon salt
- ½ cup (100 g) granulated sugar
- ½ cup (113 g) unsalted butter, room temperature
- ½ teaspoon almond extract
- 2 eggs, room temperature
- 8 day old croissants
- ¼ cup sliced almonds for topping (optional)
- ¼ cup (30 g) powdered sugar for topping (optional)
Instructions
- Preheat your oven to 350 F (177 C) and line baking sheets with parchment paper.
- In a saucepan, prepare the simple syrup by combining water and granulated sugar; simmer until dissolved, then stir in vanilla extract and cool.
- In a stand mixer, whisk together almond flour, all-purpose flour, salt, and sugar. Gradually add butter, eggs, and almond extract; mix until light and fluffy.
- Slice each croissant in half lengthwise. Brush the insides with the simple syrup, spread almond filling on the bottom half, then replace the top.
- Brush more syrup on top, add extra filling if desired, sprinkle sliced almonds, and bake for 15-18 minutes until golden brown.
