  • ¼ cup (50 g) granulated sugar
  • 4 tablespoons (60 ml) vanilla extract (alcohol-free)
  • 1 cup almond flour
  • 2 tablespoons (15 g) all purpose flour
  • ½ teaspoon salt
  • ½ cup (100 g) granulated sugar
  • ½ cup (113 g) unsalted butter, room temperature
  • ½ teaspoon almond extract
  • 2 eggs, room temperature
  • 8 day old croissants
  • ¼ cup sliced almonds for topping (optional)
  • ¼ cup (30 g) powdered sugar for topping (optional)

Instructions

  1. Preheat your oven to 350 F (177 C) and line baking sheets with parchment paper.
  2. In a saucepan, prepare the simple syrup by combining water and granulated sugar; simmer until dissolved, then stir in vanilla extract and cool.
  3. In a stand mixer, whisk together almond flour, all-purpose flour, salt, and sugar. Gradually add butter, eggs, and almond extract; mix until light and fluffy.
  4. Slice each croissant in half lengthwise. Brush the insides with the simple syrup, spread almond filling on the bottom half, then replace the top.
  5. Brush more syrup on top, add extra filling if desired, sprinkle sliced almonds, and bake for 15-18 minutes until golden brown.
