- ¾ cup (170 g) unsalted butter, room temperature
- ¾ cup (150 g) granulated sugar
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- ½ cup (122.5 g) whole milk
- 2 ounces cream cheese, softened
- ½ cup (100 g) granulated sugar
- 2 cups (476 g) heavy cream
- ½ teaspoon vanilla extract
- 1 pinch kosher salt
Instructions
- Prepare the apple filling by cooking diced Granny Smith apples with sugar, lemon juice, cinnamon, and flour until tender. Let it cool.
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In one bowl, mix flour, baking powder, cinnamon, nutmeg, and salt; in another bowl, cream butter and sugar until fluffy. Add eggs, vanilla extract, and milk.
- Gradually combine the dry ingredients into the wet ingredients without overmixing.
- Fill each liner halfway with batter, add a spoonful of cooled apple filling, and then top with more batter.
- Bake for 20–25 minutes until golden brown and a toothpick inserted comes out clean.
- Make the whipped cream topping by beating cream cheese and sugar before folding in whipped cream. Frost cooled cupcakes.
