  • 2 lamb shanks
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 3 garlic cloves, minced
  • 3 large carrots, peeled and cut into chunks
  • 2 celery stalks, chopped
  • 2 tablespoons tomato paste
  • 1 cup apple vinegar
  • 2 cups beef stock
  • Fresh thyme sprigs

Instructions

  1. In a heavy Dutch oven, heat olive oil over medium-high heat. Season lamb shanks with salt and pepper; brown them on all sides (4-5 minutes per side). Remove from pot.
  2. Sauté onions until translucent (about 5 minutes). Add garlic and cook for another minute before adding carrots and celery; sauté for 5 more minutes.
  3. Stir in tomato paste; then pour in apple vinegar while scraping browned bits from the pot. Add beef stock and bring to a simmer.
  4. Return lamb shanks to the pot with fresh thyme, cover, and reduce heat to low. Simmer gently for 2-3 hours until meat is tender.
  5. Serve hot with vegetables on top or alongside your favorite side dishes.
