- 1 lb dried pinto beans
- 4 cups chicken stock
- 1 bottle beef broth
- 2 cups water
- 6 slices turkey bacon
- 1 medium onion
- 2 jalapeño peppers
- 3 cloves garlic
- Fresh cilantro
- 2 tomatoes
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Soak the pinto beans overnight in water. Drain before cooking.
- In a large pot, combine soaked beans, chicken stock, beef broth, water, and turkey bacon. Simmer on low heat for 1.5 hours.
- In a skillet, cook turkey bacon until crispy; set aside.
- Sauté chopped onion, jalapeños, and minced garlic in the same skillet until softened.
- Add sautéed vegetables and turkey bacon to the pot along with cilantro, tomatoes, cumin, oregano, salt, and black pepper.
- Simmer for another 1.5 hours or until beans are tender.
