  • 1 lb dried pinto beans
  • 4 cups chicken stock
  • 1 bottle beef broth
  • 2 cups water
  • 6 slices turkey bacon
  • 1 medium onion
  • 2 jalapeño peppers
  • 3 cloves garlic
  • Fresh cilantro
  • 2 tomatoes
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Soak the pinto beans overnight in water. Drain before cooking.
  2. In a large pot, combine soaked beans, chicken stock, beef broth, water, and turkey bacon. Simmer on low heat for 1.5 hours.
  3. In a skillet, cook turkey bacon until crispy; set aside.
  4. Sauté chopped onion, jalapeños, and minced garlic in the same skillet until softened.
  5. Add sautéed vegetables and turkey bacon to the pot along with cilantro, tomatoes, cumin, oregano, salt, and black pepper.
  6. Simmer for another 1.5 hours or until beans are tender.
