Instructions

  1. In a heavy-based saucepan, heat the milk with lemon zest, orange zest, and cinnamon stick until it simmers; then remove from heat.
  2. Mix cornstarch with a splash of water to create a slurry.
  3. In a bowl, whisk together egg yolks and caster sugar until pale; gradually mix in cornstarch slurry and a splash of hot milk.
  4. Remove citrus peels and cinnamon stick from the milk, then slowly incorporate the egg mixture while whisking continuously.
  5. Return to low heat and whisk until thickened into a pudding-like consistency.
  6. Divide custard into ramekins and cover with plastic wrap; refrigerate for at least 4 hours (preferably overnight).
  7. Before serving, sprinkle sugar on top of each custard and caramelize using a blowtorch or under the broiler.
