  • 500g Carrots
  • 2 tbsp Balsamic Vinegar
  • 3 tbsp Olive Oil
  • 2 tbsp Maple Syrup
  • 100g Puy Lentils
  • 400g Vegan Yogurt
  • 20g Tahini
  • Juice of 1 Orange
  • Pecans and Fresh Herbs (for garnish)

Instructions

  1. Preheat your oven to 200°C (392°F).
  2. Cook the lentils in boiling water for 25-30 minutes until tender; drain and spread on a baking tray. Season with cumin, salt, pepper, and olive oil; bake for 25 minutes until crispy.
  3. Slice carrots if large, drizzle with olive oil, season, and roast for about 20 minutes.
  4. Mix balsamic vinegar, olive oil, and maple syrup; drizzle over the carrots after roasting for 20 minutes. Add thyme sprigs and roast for another 15-20 minutes.
  5. For the yogurt sauce, mix tahini with vegan yogurt and juice from half an orange; season to taste.
  6. Toast pecans for added flavor before serving.
  7. Plate by layering whipped yogurt, crispy lentils, roasted carrots, pecans, and fresh herbs.
