  • 3/4 cup granulated sugar
  • 1/2 cup sour cream
  • 1/4 cup softened butter
  • 1 egg
  • 1 cup mashed ripe bananas (about 2 bananas)
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups powdered sugar
  • 1 1/2 tablespoons milk

Instructions

  1. Preheat your oven to 375°F (190°C). Line an 8×8 baking dish with parchment paper.
  2. In a large mixing bowl, beat together the sugar, sour cream, softened butter, and egg until creamy. Mix in the mashed bananas and vanilla extract.
  3. Add in the flour, baking soda, and salt. Stir until just combined and pour the batter into the prepared pan.
  4. Bake for 20 to 25 minutes until golden brown. Let cool slightly before lifting from the pan using parchment paper.
  5. For the icing, melt the remaining butter in a saucepan over medium heat until browned. Pour into a bowl and whisk together with powdered sugar, vanilla extract, and milk until smooth.
