  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon cornstarch
  • 1 teaspoon minced garlic
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes (optional)
  • Cooked rice
  • Chopped green onions (optional)
  • Sesame seeds (optional)

Instructions

  1. In a medium bowl, toss chicken cubes with olive oil, salt, and pepper.
  2. Heat a large skillet over medium-high heat and cook chicken until browned (3-4 minutes per side). Remove from skillet.
  3. Whisk together brown sugar, pineapple juice, soy sauce, apple cider vinegar, cornstarch, garlic, ginger, and red pepper flakes in a bowl.
  4. Pour the sauce into the skillet and simmer until thickened (3-5 minutes).
  5. Add the cooked chicken back into the skillet along with pineapple chunks; stir to coat.
  6. Cook for an additional 2-3 minutes until heated through. Serve over rice and garnish if desired.
