- 1 cup packed light brown sugar
- 1/2 cup pineapple juice
- 1/4 cup low-sodium soy sauce
- 2 tablespoons apple cider vinegar
- 1 tablespoon cornstarch
- 1 teaspoon minced garlic
- 1/2 teaspoon ground ginger
- 1/4 teaspoon red pepper flakes (optional)

Instructions
- In a medium bowl, toss chicken cubes with olive oil, salt, and pepper.
- Heat a large skillet over medium-high heat and cook chicken until browned (3-4 minutes per side). Remove from skillet.
- Whisk together brown sugar, pineapple juice, soy sauce, apple cider vinegar, cornstarch, garlic, ginger, and red pepper flakes in a bowl.
- Pour the sauce into the skillet and simmer until thickened (3-5 minutes).
- Add the cooked chicken back into the skillet along with pineapple chunks; stir to coat.
- Cook for an additional 2-3 minutes until heated through. Serve over rice and garnish if desired.
