  • 4 large eggs
  • 1/2 cup heavy cream
  • 1/2 cup sour cream
  • 1 cup granulated sugar (for caramel sauce)
  • 5 tbsp unsalted butter (for caramel sauce)
  • 1/2 cup heavy cream (for caramel sauce)
  • 1 tsp salt

Instructions

  1. Prepare the Caramel Sauce: In a saucepan, melt sugar over medium heat until golden brown. Stir in butter until melted, then add warmed heavy cream and mix well with vanilla extract and salt. Let cool.
  2. Make the Crust: Preheat oven to 350°F (175°C). Mix crushed Biscoff cookies with melted butter and press into the bottom of a springform pan.
  3. Prepare the Filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in heavy cream, sour cream, cornstarch, vanilla extract, and two-thirds of the cooled caramel sauce.
