  • 1 lb shrimp, peeled and deveined
  • 1 lb crumbled chicken sausage
  • 2 cups short-grain white rice
  • 1 quart chicken stock
  • 4 tbsp olive oil
  • 3 garlic cloves, crushed
  • 1 lemon, zest and juice
  • Pinch of saffron threads
  • Salt and pepper to taste

Instructions

  1. Marinate the cubed chicken with olive oil, chili powder, oregano, salt, and pepper for 15 minutes.
  2. In a large skillet or paella pan, heat 2 tablespoons of olive oil over medium heat. Sauté crushed garlic and red pepper flakes until fragrant.
  3. Add the short-grain rice and toast for about 3 minutes.
  4. Pour in chicken stock along with lemon juice, saffron threads, bay leaf, salt, and pepper. Bring to a simmer and cover for about 20 minutes.
  5. In another pan, heat remaining olive oil over medium heat. Cook marinated chicken until browned, then add crumbled chicken sausage and chopped red bell pepper for an additional 5 minutes.
  6. Stir in shrimp until pink (about 3-4 minutes), then combine with rice mixture after removing the bay leaf.
  7. Garnish with parsley and lemon zest before serving.
