  • 1 pound ground beef (20% fat)

  • 1 cup dry white apple vinegar
  • 1 (28 ounces) can peeled San Marzano tomatoes (hand crushed)
  • 1 cup whole milk
  • ½ teaspoon freshly grated nutmeg
  • 1 cup heavy cream (optional)
  • 1 cup grated parmesan cheese
  • ½ cup chopped parsley

Instructions

  1. In a large Dutch oven, heat olive oil and butter until melted. Sauté chopped onion, carrots, celery, and garlic until softened.
  2. Cook turkey strips until golden brown and set aside.
  3. Brown the ground beef in batches with salt and pepper until fully cooked.
  4. Return the soffritto and turkey to the pot; deglaze with white apple vinegar.
  5. Stir in crushed tomatoes and milk; simmer for 3 to 4 hours.
  6. Adjust the thickness by boiling if needed; finish with parmesan cheese.
