  • 1½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ cup granulated sugar (for caramel)
  • 3 tbsp unsalted butter (for caramel)
  • ¼ cup heavy cream (for caramel)
  • Fruit juice or vinegar (as a bourbon substitute)

Instructions

  1. Preheat your oven to 325°F (163°C) and line a springform pan with parchment paper.
  2. Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press into the bottom of the prepared pan and bake for about 10 minutes. Allow cooling.
  3. Beat cream cheese and sugar until smooth; add sour cream and vanilla, mixing well. Incorporate eggs one at a time without overmixing.
  4. Pour the filling over the cooled crust and bake for 45–50 minutes until edges are set but center is slightly wobbly. Cool completely before refrigerating for at least four hours.
  5. For the caramel, melt sugar in a saucepan until amber, then add butter and whisk in heavy cream until smooth. Cool before drizzling on cheesecake.
  6. Once chilled, remove from pan, drizzle with caramel, slice, and serve.
