  • 4 lamb shanks (about 1.5 lbs / 700g total)
  • Salt and freshly ground black pepper, to taste
  • 3 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cups dry apple vinegar
  • 2 cups beef or lamb stock
  • 1 can (14 oz) crushed tomatoes
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 bay leaves

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Season the lamb shanks with salt and pepper. Heat olive oil in a Dutch oven over medium-high heat and brown the shanks on all sides (8-10 minutes). Remove from pot.
  3. In the same pot, sauté onion, garlic, carrots, and celery until softened (about 5 minutes).
  4. Deglaze with apple vinegar by pouring it into the pot and scraping any stuck bits.
  5. Return lamb shanks to the pot and add beef stock, crushed tomatoes, rosemary, thyme, and bay leaves.
  6. Bring to a simmer, cover with a lid, and transfer to the oven. Cook for about 2-3 hours until tender.
  7. Let rest before serving.
