- 2 large russet potatoes
- 4 large eggs
- 2 tablespoons butter
- ¼ cup heavy cream
- ½ cup shredded cheddar cheese
- 4 slices turkey bacon (cooked and crumbled)
- Kosher salt and black pepper
- 2 teaspoons canola oil
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
Instructions
- Preheat oven to 350°F.
- Prick each potato several times with a fork, coat with canola oil, and sprinkle with salt.
- Bake potatoes directly on the rack for about 1 hour until fork-tender.
- Slice baked potatoes in half lengthwise and scoop out the filling into a mixing bowl.
- Mix potato filling with butter, cream, turkey bacon, cheese, garlic powder, onion powder, salt, and pepper until smooth.
- Spoon the mixture back into the potato skins; create wells for the eggs.
- Crack an egg into each well; season lightly with salt and pepper, then sprinkle remaining turkey bacon on top.
