- 2 medium heads broccoli
- ½ red onion
- ½ cup dried cranberries
- ¼ cup chopped almonds
- ¼ cup sunflower or pumpkin seeds
- ½ cup vegan mayo
- ½ cup Greek yogurt
- 2 tablespoons apple cider vinegar
- 1 tablespoon maple syrup
- 1 teaspoon salt
- ⅛ teaspoon black pepper
Instructions
- Chop the broccoli into bite-sized florets and add them to a large mixing bowl.
- Toast the chopped almonds and sunflower or pumpkin seeds in a skillet over medium heat for about 2 minutes until golden. Let them cool.
- In a separate bowl, whisk together vegan mayo, Greek yogurt, apple cider vinegar, maple syrup, salt, and black pepper until smooth.
- Add finely chopped red onion, dried cranberries, toasted nuts and seeds, and sun-dried tomatoes to the broccoli bowl.
- Pour the dressing over the salad ingredients and toss gently to coat evenly. Serve immediately or chill for at least 30 minutes before serving.
