  • 2 pounds butternut squash, peeled and cubed
  • 2 Honeycrisp apples, peeled and cubed
  • Olive oil
  • Salt
  • Black pepper
  • 2 tablespoons pure maple syrup
  • 1/2 teaspoon ground dried sage
  • 1 1/2 teaspoons Herbes de Provence
  • 1/2 pound sweet Italian sausage (substitute turkey sausage if desired)
  • 2 small fennel bulbs, thinly sliced
  • 1 onion, thinly sliced
  • 1 cup grated Gruyere cheese

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with foil.
  2. In a large bowl, combine butternut squash and apples; drizzle with olive oil, seasoning with salt, pepper, maple syrup, sage, and Herbes de Provence. Toss to coat.
  3. Spread mixture on the baking sheet and roast for about 35 minutes until tender.
  4. Meanwhile, heat a skillet over medium-high heat with olive oil; add crumbled sausage and cook until browned. Remove from pan.
  5. In the same skillet, caramelize fennel and onion until golden brown; combine with sausage.
  6. Switch oven to broil; in a large bowl, mix roasted squash/apples with sausage mixture and remaining maple syrup. Transfer to a baking dish.
  7. Top with Gruyere cheese and broil for a few minutes until melted and golden-brown.
  8. Serve warm garnished with fresh sage leaves.
