Ingredients
- 2 pounds butternut squash, peeled and cubed
- 2 Honeycrisp apples, peeled and cubed
- Olive oil
- Salt
- Black pepper
- 2 tablespoons pure maple syrup
- 1/2 teaspoon ground dried sage
- 1 1/2 teaspoons Herbes de Provence
- 1/2 pound sweet Italian sausage (substitute turkey sausage if desired)
- 2 small fennel bulbs, thinly sliced
- 1 onion, thinly sliced
- 1 cup grated Gruyere cheese
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with foil.
- In a large bowl, combine butternut squash and apples; drizzle with olive oil, seasoning with salt, pepper, maple syrup, sage, and Herbes de Provence. Toss to coat.
- Spread mixture on the baking sheet and roast for about 35 minutes until tender.
- Meanwhile, heat a skillet over medium-high heat with olive oil; add crumbled sausage and cook until browned. Remove from pan.
- In the same skillet, caramelize fennel and onion until golden brown; combine with sausage.
- Switch oven to broil; in a large bowl, mix roasted squash/apples with sausage mixture and remaining maple syrup. Transfer to a baking dish.
- Top with Gruyere cheese and broil for a few minutes until melted and golden-brown.
- Serve warm garnished with fresh sage leaves.
