Ingredients
- 1 head of garlic
- 3 tbsp olive oil
- 50 grams (1/4 cup) butter
- 200 grams (1 1/2 cups) all-purpose flour
- 200 grams (2 cups) mozzarella cheese
- 90 grams (1/3 cup) warm milk
- 7 grams (2 1/4 tsp) active dry yeast
- 2 egg yolks
- Salt
- Sugar
Instructions
- Roast the garlic by placing it in a ramekin with olive oil and salt, covered with aluminum foil. Bake at 160°C (320°F) for about 2 hours until soft.
- Mix the roasted garlic with softened butter, parsley, and some garlic oil to create garlic butter.
- Proof yeast in warm milk mixed with honey for about 10 minutes until frothy.
- In a mixing bowl, combine all-purpose flour, sugar, softened butter, salt, egg yolks, milk powder (if using), and the yeast mixture.
- Knead the dough for 15–20 minutes until smooth. Let it rise in a warm spot until doubled in size (about 90 minutes).
- Roll out the dough, spread with garlic butter, sprinkle mozzarella cheese, roll into logs, cut into portions, and let them rise again for 30 minutes on a baking sheet.
- Preheat oven to 175°C (350°F), brush rolls with egg wash, then bake for 20–25 minutes until golden brown.
- Brush with leftover garlic butter before serving.
