Ingredients
- 12 oz smoked sausage (Andouille or Kielbasa), sliced
- 1 cup long-grain white rice, rinsed
- 1 ½ cups chicken broth
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tbsp Cajun seasoning
- 1 tbsp olive oil
Instructions

- Return the sausage to the skillet. Stir in rinsed rice, chicken broth, and Cajun seasoning. Bring to a boil.
- Reduce heat to low, cover with a lid, and simmer for about 15 minutes until rice is cooked through.
