Ingredients
- 3 quarts water
- 1 (12-ounce) can beef broth (optional)
- 3 tablespoons Creole Cajun seasoning
- 1 tablespoon Old Bay seasoning
- 1 medium yellow onion, roughly sliced into half-moons
- 1 large lemon, cut into wedges
- 1 lb baby potatoes, red or gold (or a mix of both)
- 1 lb pre-cooked snow crab leg clusters, fresh or frozen
- 1 – 1 ½ lbs jumbo shrimp, deveined
- 4–6 ears mini sweet corn on the cob
- 1 cup (2 sticks) unsalted butter
- 10 cloves garlic, finely minced or pressed
- 2 tablespoons lemon juice, freshly squeezed
- 1 tablespoon fresh chopped parsley
- 1 teaspoon smoked paprika
- Hot sauce, to taste
Instructions
- In a large stockpot, combine water and beef broth over medium-high heat. Bring to a boil and season with Cajun and Old Bay seasonings. Add sliced onion and lemon wedges, boiling for about 15 minutes.
- Add sausage rounds and baby potatoes, cooking for an additional 15–20 minutes until tender.
- Gently add snow crab clusters, jumbo shrimp, and corn. Stir carefully and continue boiling for another 5–7 minutes until shrimp are pink.
- In a separate saucepan, melt butter with minced garlic, lemon juice, Old Bay seasoning, parsley, smoked paprika, and hot sauce over medium heat until well combined.
- Transfer boil contents to a lined baking sheet using a spider strainer. Pour garlic butter sauce over everything and toss gently to coat.
- Serve immediately with extra lemon wedges on the side.
