  • 75 grams finely diced apples (1 small apple)
  • 1/4 teaspoon cinnamon
  • 60 grams salted caramel
  • 100 grams egg whites (room temperature)
  • 1/4 teaspoon cream of tartar
  • 60 grams granulated sugar
  • 110 grams almond flour (sifted)
  • 200 grams powdered sugar (sifted)
  • 12 drops red food coloring
  • 113 grams unsalted butter (room temperature)
  • 180 grams powdered sugar
  • 60 grams salted caramel

Instructions

  1. Prepare the apple filling by melting unsalted butter in a saucepan, adding diced apples and cinnamon until softened, then mixing in salted caramel. Let cool.
  2. Preheat the oven to 150°C (300°F). Sift together almond flour and powdered sugar.
  3. Whip egg whites with cream of tartar until soft peaks form. Gradually add granulated sugar until stiff peaks form.
  4. Fold the almond flour mixture and red food coloring into the egg whites gently.
  5. Pipe even circles onto a baking sheet lined with parchment paper, let rest for 30 minutes, then bake for about 15 minutes.
  6. For the buttercream, beat room temperature butter until creamy, add powdered sugar gradually, then mix in salted caramel.
  7. Assemble by pairing macaron shells, filling one with buttercream and topping with apple filling before sandwiching together.
