- 100 grams egg whites (room temperature)
- 1/4 teaspoon cream of tartar
- 60 grams granulated sugar
- 110 grams almond flour (sifted)
- 200 grams powdered sugar (sifted)
- 1–2 drops red food coloring
- 113 grams unsalted butter (room temperature)
- 180 grams powdered sugar
- 60 grams salted caramel
Instructions
- Prepare the apple filling by melting unsalted butter in a saucepan, adding diced apples and cinnamon until softened, then mixing in salted caramel. Let cool.
- Preheat the oven to 150°C (300°F). Sift together almond flour and powdered sugar.
- Whip egg whites with cream of tartar until soft peaks form. Gradually add granulated sugar until stiff peaks form.
- Fold the almond flour mixture and red food coloring into the egg whites gently.
- Pipe even circles onto a baking sheet lined with parchment paper, let rest for 30 minutes, then bake for about 15 minutes.
- For the buttercream, beat room temperature butter until creamy, add powdered sugar gradually, then mix in salted caramel.
- Assemble by pairing macaron shells, filling one with buttercream and topping with apple filling before sandwiching together.
