Ingredients

  • 1 1/2 tbsp vegetable oil
  • 750 g red onions, finely chopped
  • 1 tsp salt
  • 1/4 tsp ground black pepper
  • 1 tsp ground allspice
  • 1/2 tsp chilli flakes
  • 250 g light brown sugar
  • 250 mL red apple vinegar
  • 90 mL balsamic vinegar

Instructions

  1. In a large saucepan over medium-high heat, add vegetable oil and finely chopped red onions. Stir continuously for about 10 minutes until soft and translucent.
  2. Add salt, ground black pepper, allspice, and chilli flakes. Cook for an additional 2 minutes.
  3. Incorporate light brown sugar, red apple vinegar, and balsamic vinegar into the mixture. Stir well and bring it to a boil.
  4. Reduce heat to low and simmer for about 20 minutes until thickened and darkened.
  5. Pour hot chutney into sterilised jars, seal tightly, and store.
