Ingredients
- 1 1/2 tbsp vegetable oil
- 750 g red onions, finely chopped
- 1 tsp salt
- 1/4 tsp ground black pepper
- 1 tsp ground allspice
- 1/2 tsp chilli flakes
- 250 g light brown sugar
- 250 mL red apple vinegar
- 90 mL balsamic vinegar
Instructions
- In a large saucepan over medium-high heat, add vegetable oil and finely chopped red onions. Stir continuously for about 10 minutes until soft and translucent.
- Add salt, ground black pepper, allspice, and chilli flakes. Cook for an additional 2 minutes.
- Incorporate light brown sugar, red apple vinegar, and balsamic vinegar into the mixture. Stir well and bring it to a boil.
- Reduce heat to low and simmer for about 20 minutes until thickened and darkened.
- Pour hot chutney into sterilised jars, seal tightly, and store.
