  • 12 cups cubed French bread
  • 3 pears (peeled and diced)
  • 5 eggs
  • 2 cups milk
  • 1 cup heavy whipping cream
  • 2 tbsp brown sugar
  • 2 tsp ground cardamom
  • Kosher salt
  • 10 cardamom pods
  • 1 ½ cups sugar
  • ¼ cup water
  • 6 tbsp butter
  • ¼ cup orange juice
  • zest of 1 orange

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish with butter.
  2. In a large bowl, combine cubed bread, brown sugar, 1 tsp cardamom, and salt; toss well.
  3. In another bowl, whisk together eggs, milk, cream, and remaining cardamom until smooth.
  4. Gently fold in diced pears into the egg mixture and pour over the bread cubes.
  5. Bake for about 60 minutes or until golden brown on top; let cool slightly before serving.
  6. For the syrup: simmer sugar, water, butter, orange juice, zest, cardamom pods, salt, and cardamom until thickened.
