- 2–3 stalks celery
- 1 small bulb fennel
- 1 green apple
- ¼ cup parsley
- ½ cup walnuts
- ¼ cup extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 tablespoon honey

Instructions
- Wash and prepare all fresh produce: slice celery diagonally, thinly slice fennel using a mandoline, and core and slice green apples into wedges.
- Toast walnuts in a dry skillet over medium heat until fragrant (about 5 minutes), stirring frequently.
- To make the vinaigrette, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper in a small bowl.
- In a large mixing bowl, combine sliced celery, fennel, apples, chopped parsley, toasted walnuts. Drizzle with the vinaigrette and toss gently to combine.
- Serve immediately or let chill for added flavor.
