  • 2 pounds fresh spinach
  • 1 medium onion
  • 3 cloves garlic
  • 2 tablespoons olive oil
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • ½ teaspoon Italian seasoning
  • Salt and pepper, to taste
  • ¼ teaspoon red pepper flakes (optional)
  • ¼ cup breadcrumbs for topping

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Sauté chopped onion until soft, then add minced garlic for another minute.
  3. Gradually add fresh spinach until wilted; drain excess liquid and let cool slightly.
  4. In a mixing bowl, combine ricotta, mozzarella, Parmesan, seasoning, salt, pepper, and eggs until well mixed.
  5. Fold in the cooked spinach mixture and spread in the prepared baking dish. Sprinkle breadcrumbs on top if desired.
  6. Bake for 25–30 minutes or until the top is golden brown and bubbly.
