- 1 medium onion
- 3 cloves garlic
- 2 tablespoons olive oil
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 large eggs
- ½ teaspoon Italian seasoning
- Salt and pepper, to taste
- ¼ teaspoon red pepper flakes (optional)
- ¼ cup breadcrumbs for topping
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a large skillet, heat olive oil over medium heat. Sauté chopped onion until soft, then add minced garlic for another minute.
- Gradually add fresh spinach until wilted; drain excess liquid and let cool slightly.
- In a mixing bowl, combine ricotta, mozzarella, Parmesan, seasoning, salt, pepper, and eggs until well mixed.
- Fold in the cooked spinach mixture and spread in the prepared baking dish. Sprinkle breadcrumbs on top if desired.
- Bake for 25–30 minutes or until the top is golden brown and bubbly.
