  • 4 cups beef broth
  • 1 (20 ounce) package frozen Italian mini meatballs, thawed
  • 20 ounces fresh refrigerated cheese tortellini pasta
  • ½ cup shredded Parmesan cheese, plus additional for garnish
  • Kosher salt, to taste
  • Ground black pepper, to taste
  • Chopped fresh basil or parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté diced onion until softened, about 2-3 minutes. Add minced garlic and cook for an additional minute.
  2. Stir in undrained petite diced tomatoes, tomato sauce, Italian seasoning, beef broth, and thawed meatballs. Bring to a boil, then reduce heat and simmer uncovered for 20 minutes.
  3. Add fresh cheese tortellini and cook until tender (5-7 minutes). Stir in Parmesan cheese until melted.
  4. Adjust seasoning with salt and pepper to taste. Serve hot, garnished with extra Parmesan and fresh herbs.
