  • 1½ cups graham cracker crumbs
  • ¼ cup ground pistachios
  • 5 tbsp melted butter
  • 16 oz cream cheese
  • ½ cup sugar
  • 2 large eggs
  • ½ cup sour cream
  • ¼ cup pistachio pudding mix (dry)
  • 1 tsp vanilla extract
  • 1 can (21 oz) cherry pie filling

Instructions

  1. Preheat oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. In a bowl, combine graham cracker crumbs, ground pistachios, sugar, and melted butter. Press into the bottom of the pan and bake for 8 minutes; let cool.
  3. Beat softened cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream, pistachio pudding mix, and vanilla until combined.
  4. Pour filling over cooled crust and smooth the top. Bake for 45–50 minutes until slightly jiggly in the center.
  5. Leave cheesecake in oven with door cracked open to cool gradually; then refrigerate for at least 4 hours or overnight.
  6. Top with cherry pie filling before serving.
