- 1½ cups graham cracker crumbs
- ¼ cup ground pistachios
- 5 tbsp melted butter
- 16 oz cream cheese
- ½ cup sugar
- 2 large eggs
- ½ cup sour cream
- ¼ cup pistachio pudding mix (dry)
- 1 tsp vanilla extract
- 1 can (21 oz) cherry pie filling
Instructions
- Preheat oven to 325°F (160°C) and grease a 9-inch springform pan.
- In a bowl, combine graham cracker crumbs, ground pistachios, sugar, and melted butter. Press into the bottom of the pan and bake for 8 minutes; let cool.
- Beat softened cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream, pistachio pudding mix, and vanilla until combined.
- Pour filling over cooled crust and smooth the top. Bake for 45–50 minutes until slightly jiggly in the center.
- Leave cheesecake in oven with door cracked open to cool gradually; then refrigerate for at least 4 hours or overnight.
- Top with cherry pie filling before serving.
