- 4 cups shredded cooked chicken
- 2 cups all-purpose flour (for dumplings)
- 1 tablespoon, plus 1 teaspoon baking powder
- 1 teaspoon freshly cracked black pepper
- 1 teaspoon salt
- 1 tablespoon fresh thyme (or 1 teaspoon dried thyme, optional)
- 3/4 cup whole milk (for dumplings)
- 4 tablespoons butter (melted)
Instructions
- In a large pot, melt butter over medium-high heat. Add onion, carrots, and celery; cook for 5 minutes. Stir in garlic and cook for an additional minute.
- Add flour and mix well; then slowly pour in evaporated milk and chicken stock while stirring constantly to create a roux.
- If using raw chicken, add an extra cup of broth and simmer for 20 minutes until cooked through. Shred the chicken and return it to the pot.
- For the dumplings, combine flour, baking powder, salt, pepper, thyme, whole milk, and melted butter until just combined.
