  • 8 oz mushrooms (sliced)
  • 6 Tablespoons vegetable oil (divided)
  • Juice from 1 lemon
  • Seasoned salt
  • Cumin
  • Smoked paprika (optional)
  • Toppings: sour cream, shredded lettuce, Pico de Gallo, guacamole

Instructions

  1. Season chicken strips with seasoned salt, cumin, and smoked paprika in a mixing bowl.
  2. Combine sliced bell peppers, onion, and mushrooms in another bowl.
  3. Heat 1.5 tablespoons of oil in a cast iron skillet over high heat until smoking. Sear one-third of the vegetable mixture until crisp-tender; remove and repeat.
  4. In the same skillet, add remaining oil and cook seasoned chicken until fully cooked through. Add back seared vegetables and toss together.
  5. Serve immediately with desired toppings.
