- 1 cup panko breadcrumbs

- 1 large egg
- 10 cups water
- 15 ounces unsweetened coconut milk
- 5 tablespoons white miso paste
- 2 shallots
- 3 packets instant chicken ramen noodles
- 2 cups fresh spinach leaves

- Preheat a large skillet with oil over medium heat. In two shallow bowls, whisk an egg in one and mix panko breadcrumbs, sesame seeds, and salt in the other.
- Coat chicken cutlets in egg, then in the breadcrumb mixture. Fry each cutlet for about 3 to 4 minutes per side until golden brown; drain on paper towels.
- In a large pot, sauté sliced shallots until softened, then add minced garlic and grated ginger. Pour in coconut milk, miso paste, water, and ramen seasoning packets; bring to a boil.
- Add instant ramen noodles and cook for 2 to 3 minutes until soft. Stir in fresh spinach leaves.
