  • 1 ¼ pounds chicken cutlets
  • 1 cup panko breadcrumbs
  • ¼ cup sesame seeds
  • 1 large egg
  • 10 cups water
  • 15 ounces unsweetened coconut milk
  • 5 tablespoons white miso paste
  • 2 shallots
  • 3 packets instant chicken ramen noodles
  • 2 cups fresh spinach leaves
  • Fried onions
  • Scallions
  • Sriracha
  • Gochujang sauce

Instructions

  1. Preheat a large skillet with oil over medium heat. In two shallow bowls, whisk an egg in one and mix panko breadcrumbs, sesame seeds, and salt in the other.
  2. Coat chicken cutlets in egg, then in the breadcrumb mixture. Fry each cutlet for about 3 to 4 minutes per side until golden brown; drain on paper towels.
  3. In a large pot, sauté sliced shallots until softened, then add minced garlic and grated ginger. Pour in coconut milk, miso paste, water, and ramen seasoning packets; bring to a boil.
  4. Add instant ramen noodles and cook for 2 to 3 minutes until soft. Stir in fresh spinach leaves.
  5. Slice the fried chicken and serve over the ramen soup along with desired toppings.
