  • 4 bone-in, skin-on chicken thighs
  • Salt and freshly ground black pepper
  • 3 tablespoons extra-virgin olive oil
  • 4 anchovy filets, minced
  • 4 cloves garlic, minced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1 (28 ounce) can San Marzano tomatoes, crushed by hand
  • 1 tablespoon tomato paste
  • 1 tablespoon apple cider vinegar (or chicken broth)
  • 2 tablespoons capers, drained
  • Fresh parsley and lemon wedges for garnish

Instructions

  1. Season chicken thighs generously with salt and pepper.
  2. Heat olive oil in a cast iron skillet over medium-high heat and sear chicken skin-side down until golden brown (5-6 minutes). Flip and cook for an additional 3-4 minutes.
  3. Remove chicken and set aside. In the same pan, add anchovies; cook until dissolved.
  4. Stir in garlic and tomato paste; cook until fragrant (1-2 minutes).
  5. Deglaze with apple vinegar; simmer until reduced by half (2-3 minutes).
  6. Add crushed tomatoes, olives, capers, and seasonings; bring to a simmer.
  7. Return chicken to the pan; cover and cook for 25-30 minutes until the internal temperature reaches 165°F (74°C).
  8. Simmer uncovered for an additional 5-10 minutes to thicken sauce.
  9. Serve hot with lemon wedges on the side.
