  • 1/4 cup red apple vinegar
  • 1 tbsp Dijon mustard

  • 1 tsp garlic

  • 1/4 tsp salt (to taste)
  • 1/8 tsp black pepper (to taste)

Instructions

  1. In a mixing bowl or mason jar, whisk together olive oil, lemon juice, lemon zest, red apple vinegar, Dijon mustard, garlic, oregano, parsley, salt, and black pepper until well combined.
  2. In a large mixing bowl, combine the drained chickpeas with the dressing.
