Instructions

  2. In a bowl, whisk together flour, cornstarch, baking soda, and sea salt.
  3. Beat the cooled butter with both sugars until resembling wet sand.
  4. Incorporate the egg, egg yolk, and vanilla extract until creamy.
  5. Gradually mix in dry ingredients until just combined.
  6. Chill the dough for at least one hour (up to 72 hours for better flavor).
  7. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  8. Portion out chilled dough into balls and place on baking sheets about 2 inches apart.
  9. Bake for 8-10 minutes until golden brown; cool on the baking sheet before transferring to a wire rack.
