  • 2 tbsp cornstarch
  • 3 large egg yolks
  • 2 tbsp unsalted butter
  • 8 oz (225 g) dark chocolate, chopped
  • 1 cup heavy cream
  • 2 tbsp unsalted butter
  • Fresh orange slices or candied orange peel for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
  2. In a bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla to dry ingredients; mix until smooth.
  4. Gradually stir in hot coffee.
  5. Divide batter among prepared pans and bake for 25–30 minutes. Cool completely.
  6. Prepare the orange filling by cooking sugar, cornstarch, and egg yolks with orange juice until thickened; stir in zest and butter.
  7. For ganache, heat cream until steaming; pour over chopped chocolate and let sit before stirring until smooth.
  8. Assemble the cake with layers of chocolate cake and orange filling; pour ganache over top.
