  • 4 large eggs
  • ¾ cup granulated sugar
  • 1½ cups whole milk
  • 1 cup heavy cream
  • 1½ tsp ground cinnamon (or steeped cinnamon stick)
  • 2 tsp pure vanilla extract (or scraped vanilla bean)
  • Pinch of salt
  • Optional: ¼ tsp ground nutmeg
  • Optional: 1 tsp orange zest

Instructions

  1. Preheat oven to 375°F (190°C). Roll out the crust into a 9-inch pie dish. Pre-bake for 15 minutes with weights, remove weights, and bake for another 5 minutes until golden. Let cool.
  2. In a saucepan, heat milk and cream with cinnamon and vanilla until steaming. Remove from heat and steep spices if using whole forms.
  3. In a bowl, whisk eggs, sugar, and salt until smooth.
  4. Gradually pour hot milk mixture into the egg mixture while whisking constantly. Strain through a fine-mesh sieve.
  5. Lower oven temperature to 325°F (160°C). Pour custard into pre-baked crust and bake for 35–40 minutes, until edges set but center jiggles slightly.
  6. Cool at room temperature, then refrigerate for at least 2 hours before serving.
