- 1 teaspoon vanilla extract
- 3 tablespoons melted butter
- 1/4 cup sugar (for cinnamon swirl)
- 1 tablespoon ground cinnamon
- 1 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
Instructions
- Preheat your oven to 350°F (175°C). Prepare a 9×5 inch loaf pan by lining it with parchment paper or lightly greasing it.
- In a large bowl, whisk together the flour, baking soda, baking powder, and salt.
- In another bowl, combine sugar, eggs, vegetable oil, vanilla extract, and grated zucchini until well blended.
- Gradually add the dry ingredients to the wet mixture and stir gently until just combined.
- Mix melted butter, sugar, and ground cinnamon in a small bowl to create the cinnamon swirl mixture.
- Pour half of the batter into the prepared pan. Drizzle half of the cinnamon mixture over it and swirl gently with a knife. Repeat with remaining batter and cinnamon mixture.
- Bake for 45–55 minutes or until a toothpick inserted into the center comes out clean. If needed, tent with foil after 30 minutes to prevent over-browning.
- Let cool before transferring to a wire rack. Drizzle glazed powdered sugar mixed with milk over the cooled bread.
