  • 5 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 8-inch round cake pans with nonstick spray.
  2. In one bowl, whisk together flour, baking powder, baking soda, salt, and spices.
  3. In another bowl, mix melted coconut oil, sugar, eggs, buttermilk, and vanilla until smooth.
  4. Combine wet and dry ingredients gently before folding in grated carrots.
