  • 1 tsp ground cumin
  • 1 tsp smoked paprika

  • 1 tbsp tomato paste
  • 1 (14 oz) can full-fat coconut milk
  • 1 cup beef broth

Instructions

  1. Heat coconut oil in a large pot over medium heat. Sauté the onion, garlic, and ginger until the onions are translucent.
  2. Add the beef chunks and brown them on all sides to enhance flavor.
  3. Stir in curry powder, turmeric, cumin, smoked paprika, cayenne pepper (if desired), and tomato paste.
  4. Pour in the coconut milk and beef broth; stir until combined. Bring to a gentle simmer.
  5. Cover the pot, reduce heat to low, and let it cook for about 2-3 hours until the beef is tender.
