Ingredients
- 1.5 lbs beef chuck
- 1 can (13.5 oz) full-fat coconut milk
- 2 tbsp red or yellow curry paste
- 1 large yellow onion
- 4 garlic cloves
- 1 tbsp fresh ginger, grated
- 1 tsp ground turmeric
- 1 cup beef broth or water
- 1 tbsp brown sugar
- Juice of lime
- 1 cup jasmine rice
- 4 garlic naan
- Salt & freshly ground black pepper
- 2 tbsp vegetable oil
Instructions
- Sear seasoned beef cubes in vegetable oil until browned; remove from skillet.
- Sauté sliced onion until translucent; add minced garlic and ginger.
- Stir in curry paste and turmeric, then return beef to skillet.
- Add coconut milk and broth; bring to a simmer.
- Cover and braise on low heat for about 2 hours until tender.
- Prepare jasmine rice according to package instructions.
- Serve braised beef over rice with warm naan; garnish with fresh herbs.
