  • 1.5 lbs beef chuck
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp red or yellow curry paste
  • 1 large yellow onion
  • 4 garlic cloves
  • 1 tbsp fresh ginger, grated
  • 1 tsp ground turmeric
  • 1 cup beef broth or water
  • 1 tbsp brown sugar
  • Juice of lime
  • 1 cup jasmine rice
  • 4 garlic naan
  • Salt & freshly ground black pepper
  • 2 tbsp vegetable oil

Instructions

  1. Sear seasoned beef cubes in vegetable oil until browned; remove from skillet.
  2. Sauté sliced onion until translucent; add minced garlic and ginger.
  3. Stir in curry paste and turmeric, then return beef to skillet.
  4. Add coconut milk and broth; bring to a simmer.
  5. Cover and braise on low heat for about 2 hours until tender.
  6. Prepare jasmine rice according to package instructions.
  7. Serve braised beef over rice with warm naan; garnish with fresh herbs.
