  • 2 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup unsalted butter (melted and cooled)
  • 1 cup light brown sugar (packed)
  • ½ cup white granulated sugar
  • 1 teaspoon pure vanilla extract
  • 2 large eggs (room temperature)
  • 1 ½ cups semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line two cookie sheets with parchment paper.
  2. In a food processor, blend instant coffee into a fine powder. In a medium bowl, sift together flour, blended coffee, baking soda, baking powder, salt, and cinnamon.
  3. In a large mixing bowl, combine melted butter, brown sugar, white sugar, vanilla extract, and eggs until well mixed.
  4. Gradually add the dry ingredients to the wet mixture using a rubber spatula; mix until just combined. Fold in chocolate chips.
  5. Using a cookie scoop, portion dough onto prepared sheets (six per sheet) and top with extra chocolate chips if desired.
  6. Bake for 12–14 minutes until edges are golden and centers are slightly underbaked. Cool on the pan for five minutes before transferring to a cooling rack.
