- 2 tablespoons instant coffee
- 2 ½ cups all-purpose flour

- ½ teaspoon baking powder

- 1 cup unsalted butter (melted and cooled)
- 1 cup light brown sugar (packed)
- ½ cup white granulated sugar
- 1 teaspoon pure vanilla extract
- 2 large eggs (room temperature)
- 1 ½ cups semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line two cookie sheets with parchment paper.
- In a food processor, blend instant coffee into a fine powder. In a medium bowl, sift together flour, blended coffee, baking soda, baking powder, salt, and cinnamon.
- In a large mixing bowl, combine melted butter, brown sugar, white sugar, vanilla extract, and eggs until well mixed.
