  • 11 oz. white chocolate, chopped
  • 5 tablespoons unsalted butter
  • 3 tablespoons heavy cream
  • Pinch of salt
  • 1 teaspoon orange or vanilla extract (optional)
  • 1/3 cup finely chopped dried cranberries
  • 1/3 cup finely chopped toasted pistachios
  • 1/2 cup powdered sugar for coating

Instructions

  1. Melt the unsalted butter in a small saucepan over low-medium heat. Stir in the heavy cream until combined.
  2. Add a pinch of salt and optional extract to the mixture, then set aside.
  3. In a double boiler, melt the white chocolate until smooth, keeping the temperature below 105°F.
  4. Combine the melted chocolate with the butter and cream mixture using a rubber spatula.
  5. Gently fold in dried cranberries and pistachios. Cover with plastic wrap and let it sit at room temperature for an hour before refrigerating for 2-3 hours until firm.
  6. Once firm, scoop out portions and roll them into 1-inch balls. Roll each ball in powdered sugar until well-coated.
  7. Store in an airtight container in the refrigerator for up to one week.
