  • 3 tablespoons unsalted butter
  • 1 large yellow onion, chopped
  • 2 medium carrots, diced
  • 2 teaspoons garlic, minced
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ cup all-purpose flour
  • 3 cups chicken broth
  • 1 cup whole milk
  • 2 cans (15 ounces each) Great Northern white beans, rinsed and drained
  • Fresh parsley for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium-high heat. Add sliced turkey sausage and cook until browned, about 7–9 minutes. Remove and set aside.
  2. In the same pot, melt butter and sauté onion, carrots, garlic, salt, and pepper for 10–12 minutes until softened.
  3. Sprinkle flour over the vegetables and cook for an additional minute.
  4. Gradually add chicken broth and milk while stirring; bring to a simmer.
  5. Return the sausage to the pot along with the beans; stir to combine.
  6. Reduce heat to medium-low and let simmer for 15–20 minutes until thickened.
