Instructions
- Season the chicken with salt and pepper. In a large pot over medium-high heat, warm 1 tablespoon of olive oil and brown the chicken for about 3–4 minutes on each side. Remove from pot and set aside.
- Lower the heat to medium and add another tablespoon of olive oil. Sauté minced garlic, diced onion, celery, and carrots until softened (about 5–8 minutes).
- Deglaze the pot with white apple vinegar to lift any browned bits.
- Add the diced potatoes and 3 cups of chicken broth; bring to a simmer. Return the chicken to the pot and cook until fully cooked (15–20 minutes).
- In a separate medium pot, melt butter over medium heat. Whisk in flour until golden; then slowly whisk in milk and cream until thickened.
- Stir the cream mixture into the soup along with shredded chicken, corn, and peas if using.
