Ingredients
- 8 oz. fresh chicken sausage
- 1 1/2 cups medium shells (dried pasta)
- 4 cups fresh baby spinach
- 1 cup cherry tomatoes
- 1/2 red bell pepper
- 1/2 yellow onion
- 2 cloves garlic (minced)
- 1/2 cup half & half
- 1 Tbsp. olive oil
- 1/2 tsp. crushed red pepper
- Kosher salt & freshly cracked black pepper
- 1/2 tsp. granulated sugar
Instructions
- Prepare the vegetables by quartering the cherry tomatoes and chopping the bell pepper and onion.
- In a large skillet, heat olive oil over medium heat. Add tomatoes, bell pepper, onion, salt, and crushed red pepper; cook for 7-8 minutes until softened.
- Cook pasta in boiling salted water until al dente.
- Add chicken sausage and garlic to the skillet; cook until browned. Stir in sugar and half & half.
- Combine cooked pasta with the sauce using a slotted spoon; mix well.
- Stir in grated Parmesan cheese and add reserved pasta water for desired creaminess.
