  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 4 slices turkey bacon substitute, chopped
  • 2 cups baby spinach
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar (as Worcestershire sauce substitute)
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1/2 cup heavy cream
  • 1 tablespoon olive oil

Instructions

  1. In a large skillet over medium heat, add olive oil and cook chicken until golden brown on both sides (6-7 minutes per side). Remove and set aside.
  2. In the same skillet, sauté diced onion for 3-4 minutes until softened. Add minced garlic and cook for an additional minute.
  3. Stir in Dijon mustard, apple cider vinegar, and chicken broth; bring to a gentle simmer.
  4. Reduce heat to medium-low and mix in sour cream and heavy cream until well combined; heat for another 2-3 minutes.
  5. Return the cooked chicken to the skillet along with baby spinach; stir until spinach wilts into the sauce. Optionally add cornstarch for added thickness.
  6. Serve hot over rice or pasta as desired.
