- 4 slices turkey bacon substitute, chopped
- 2 cups baby spinach
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar (as Worcestershire sauce substitute)
- 1 cup chicken broth
- 1 cup sour cream
- 1/2 cup heavy cream
- 1 tablespoon olive oil
Instructions
- In a large skillet over medium heat, add olive oil and cook chicken until golden brown on both sides (6-7 minutes per side). Remove and set aside.
- In the same skillet, sauté diced onion for 3-4 minutes until softened. Add minced garlic and cook for an additional minute.
- Stir in Dijon mustard, apple cider vinegar, and chicken broth; bring to a gentle simmer.
- Reduce heat to medium-low and mix in sour cream and heavy cream until well combined; heat for another 2-3 minutes.
- Return the cooked chicken to the skillet along with baby spinach; stir until spinach wilts into the sauce. Optionally add cornstarch for added thickness.
- Serve hot over rice or pasta as desired.
