  • 1 lb uncased chicken or turkey sausage
  • 2 tbsp extra virgin olive oil
  • 1/2 cup diced shallots
  • 4 cloves minced garlic
  • 1 1/2 cups sun-dried tomatoes, julienned
  • 3/4 cup dry apple vinegar
  • 2 cups heavy cream
  • Fresh thyme for garnish
  • 2 cups packed fresh spinach, for garnish
  • 2/3 cup grated Asiago cheese

Instructions

  1. In a large skillet over medium heat, brown the Italian sausage until fully cooked. Remove and set aside on a paper towel.
  2. Boil salted water in a pot and cook pasta according to package instructions until al dente.
  3. In the same skillet, sauté shallots in olive oil until soft, then add garlic and cook for another two minutes.
  4. Stir in sun-dried tomatoes, deglaze the pan with apple vinegar, and reduce by half before adding heavy cream, thyme, and salt.
  5. Mix in grated Asiago cheese until melted, then return sausage to the skillet along with spinach until wilted.
  6. Combine with cooked pasta, serve warm with additional herbs if desired.
