  • 2 cups chicken broth
  • 1½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • ¼ tsp dried thyme
  • Fresh parsley (chopped) for garnish

Instructions

  1. Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat olive oil in a large skillet over medium heat; cook chicken until browned on both sides (5-7 minutes). Remove from skillet.
  2. Add rice to the same skillet; toast for 1 minute. Pour in chicken broth and salt; bring to a boil. Reduce heat, cover, and simmer until rice is tender (18-20 minutes).
  3. In a saucepan, melt butter, whisk in flour for 1 minute to form a roux. Gradually add milk and broth while stirring until thickened. Mix in garlic powder, thyme, and cheeses until melted.
  4. Return chicken to the skillet atop the cooked rice; pour creamy sauce over everything and stir gently.
  5. Garnish with chopped parsley before serving.
