  • 1 lb Ground Beef
  • 1 can Dark Red Kidney Beans (15 oz., drained and rinsed)
  • 1 can Great Northern Beans (15 oz., drained and rinsed)
  • 1/2 Onion (Diced)
  • 2 Medium Carrots (Diced)
  • 3 Celery Stalks (Diced)
  • 1 Tbsp Minced Garlic
  • 3 cans Tomato Sauce (8 oz.)
  • 1 can Diced Tomatoes (15 oz.)
  • 6 cups Chicken Broth
  • 1 cup Dry Ditallini Pasta
  • 3 tsp Italian Seasonings
  • 1/2 tsp Dried Thyme
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 cup Shredded Parmesan Cheese
  • 3 Tbsp Fresh Parsley (chopped)

Instructions

  1. Brown the ground beef in a skillet over medium heat until fully cooked; drain excess grease.
  2. In the crock pot, combine the cooked beef with diced onion, carrots, celery, minced garlic, tomato sauce, diced tomatoes, rinsed beans, seasonings, and chicken broth.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours until vegetables are tender.
  4. About 30 minutes before serving, stir in dry ditallini pasta.
  5. Serve hot with fresh parsley and shredded parmesan cheese.
