Ingredients
- 1 1/2 pounds boneless skinless chicken breasts
- 1 tbsp chili powder
- 2 tsp ground cumin
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1 cup frozen corn
- 2 – 10 ounce cans fire roasted tomatoes and green chiles
- 2 – 15 ounce cans cannellini beans
- 1/2 cup buffalo sauce
- 2 cups low sodium chicken broth
- 4 oz cream cheese (room temperature)
- 4 oz blended cottage cheese
Instructions
- Add all ingredients except cream cheese and cottage cheese to the slow cooker. Stir well.
- Cover and cook on low for 4-6 hours or high for 3-4 hours until chicken is cooked through.
- Remove chicken, shred it using forks, and return it to the slow cooker.
- Stir in cream cheese until smooth, then cover and cook on low for an additional 30 minutes.
- Finally, mix in blended cottage cheese, adjust seasoning, and serve hot.
