  • 15 oz can whole kernel corn (drained)
  • 10 oz bag frozen mixed vegetables
  • 2 cups beef broth
  • 2 tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 2 teaspoons freshly chopped parsley (for garnish)

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef until fully cooked. Add diced onions and minced garlic; sauté for an additional 2 minutes.
  2. Transfer the beef mixture to a slow cooker. Add diced potatoes, pinto beans, corn, mixed vegetables, beef broth, brown sugar, and spices.
